Hakumai Sushi & Omakase is a high-end Japanese restaurant based in Anson Road that has an omakase-only menu with a variety of options to suit different types of appetites.
It’s very popular in Singapore because of its use of fresh ingredients and traditional Japanese cooking techniques.
Gary Ng, the restaurant’s head chef, has more than two decades of experience in Japanese cuisine and is known for his authentic omakase and inventive culinary interpretations.
We found it impressive that he trained for 10 years before mastering the skills of preparing sushi and keeping fish fresh.
We appreciate that Hakumai takes pride in using high-quality ingredients, such as Niigata Prefecture’s distinctive Koshi rice and seasonal fish imported from Japan’s Tsukiji Market.
The establishment’s ambiance is also amazingly beautiful and the service is exceptional, with Chef Gary entertaining guests with his banter and educating them on how the dishes are prepared and how to properly enjoy them.
However, the restaurant can be pricey and there is often a long waitlist. If you are willing to splurge and wait a while, Hakumai is definitely a great option for you.

Sushi Kimura is an omakase restaurant based in Orchard Road. Its omakase menu is absolutely delicious, with every dish prepared with care and attention to detail.
We adored the uni, grilled fish, unagi, and abalone, which were all skillfully prepared and flavorful. Sushi Kimura’s ambiance is noteworthy in addition to the great food.
The restaurant’s intimate setting is designed to invoke the four seasons through the use of centuries-old Noren room dividers, and heirlooms of its owner, Chef Kimura.
His personal touches, along with the hand-painted ceremonial tea set and hand-carved placemats, really add to the traditional, authentic feel of the restaurant.
It’s clear that Chef Kimura is an expert in his craft with over two decades of experience in the industry, including stints as the executive chef at several fine dining and Michelin-starred sushi restaurants.
His focus on using premium ingredients and respecting tradition is evident in every dish. In terms of convenience, Sushi Kimura also offers takeaway and delivery options, which is always a plus.
